SWAN SOUP

1 cleaned and gutted swan
1 tbsp salt
1/3 c. dried onions
1 c. rice
1/2 gal. water

Cut up the swan. Put it in a pot of water. Add the salt and dried onions. When the water starts to boil, time it for about 1 hour and 10 minutes. At the end of that time add the rice. Then let it cook for 20-30 more minutes.

Serve.
