Traditional Recipes

Akutaq

1 boiled white fish, disconnect bones from fish, & squeeze the juice out -
3 lbs crisco
1 c sugar
1 gal.. berries-your choice

Russian Salmon Pie

2 layers of pie crust
3 c. cooked rice
1 /2 diced onion
2 tbsp. parsley flakes
3 lbs. cooked salmon

Strips

5 gal water
6 c. rock salt

Brine for 15 min. or until desired. Salt in fish, use King Salmon, cut into long strips about 1/2 in thick, 1/4 wide Then dry until 1/2 dried-smoke the fish for about three weeks.

Fried Bread

2 c. flour
1 tsp. salt
2 tbsp. baking powder
1 egg
2/3 c. water
1 /4 c. oil

Fruit Salad

4 red apples
4 oranges
7 bananas
1/2 bag of mini marshmallows
2 cans fruit cocktail-drain stjrup
1 /2 c. coconut flakes
1 c. walnuts
2 pkgs. whipped cream

Cut apples, oranges, & bananas into small pieces. Then add the rest of the ingredients..

Potato Salad

1 dz. eggs
6 potatoes
1 c. celery (diced)
1 c. mayonnaise
1 tbsp. - parsley flakes

Boil the eggs & potatoes, then cut them into small pieces & mix.

Sourdough Pancakes

3 c. flour
2 c. warm water
1 tbsp. yeast
3 tbsp. sugar

Mix together & empty into pot. Let it sit for 5 days in container On the 5th day, put 2 c. sourdough. Mix 1/2 tbsp. salt, 1/2 tbsp. sugar. Then cook like reg. pancakes. Nere!!

Salmon Berry Syrup

1/2 gal. salmon berry juice
2 c. sugar
4 tbsp. corn starch

Boil ingredients together. Use as pancake syrup.

Blueberry Jam

4 c. flour
2 c. sugar
4 tbsp. corn starch

Boil until thick, when cooled, empty into jars & store in a cool, dry place.

Cake Doughnuts

3 1/3 c. flour
1 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
2 tbsp. shortening
2 eggs
3/4 c. milk

Mix ingredients together. Roll then into little balls & put them in hot oil. Cook until brown & enjoy!!

Moose Soup

2 lb. moose meat

Wash & clean meat, cut into chunky sizes, add 10-12 c. water, add 1 /2 c - chopped onions.

1 tsp. salt

Bring to a boil.

Add 3/4 c. macaroni then add 3/4 c. rice.

2 dried potatoes

If desired, add 1 can veg-all

Lush Soup

1 lush w/liver
1 c. macaroni or 3 potatoes (diced)
1 c. rice
1 tbsp. salt
1 can veg-all
1/2 onion (diced)

Clean the fish, cut into bite sized pieces, same w/liver. Then add the salt & onions, when done, add veg-all.

Macaroni Salad

4 c. macaroni
1 dz. eggs
1 c. mayonnaise
1 can spam (diced)
1 tbsp. parsley

Boil the macaroni, drain in cold water. Boil the eggs, peel, & dice them. Then mix ingredients.

Frozen Fish (Kumlanaq)

1 frozen white fish

Cut into slices, while frozen, dip into seal oil & eat w/salt.

Dried Pike

1 fish

Cut fish, hang out to dry for 3 wks., then eat w/seal oil.

Kippered Fish (Ramarluq)

1 fish (chee, salmon, or white)

Cut fish & hang it for 5 days to 1 wk. Dry, boil in water until cooked, then eat.

Chiplets

2 lbs. moose meat
3 c. water
1/2 c. flour
4 c. minute rice
1/2 diced onion
1 tsp. salt
1/2 tsp. pepper

Dice the moose meat, add water, diced onions, boil till meat is done. Add flour w/1/2 c. cold water. Add salt & pepper, mix in rice, simmer for 20 mm. at med. hi & enjoy!!

Moose Nose

Skin the moose nose sort of frozen.

Wash it & clean it.

Cut into bite sized pieces then put into water & plain boil it. Boil for about 20 mm.

When you can poke a fork through it's done.

Moose & Bear Ribs

Saw them & put into a roast pan

Sprinkle w /salt or garlic salt

Sprinkle w /raw or fresh onions

Add 3 c. water to the bottom of roaster

Cover w/aluminum foil

Bake for 2 hrs. at 350 degrees

Baked Fish

Clean fish & take scales off

Pouch it

Put into roaster & if desired, spice w/vegetables.

Add 5-6 c. water

If desired, add rice & macaroni

Cover w/aluminum foil

If not frozen, 450 degrees for 1 hr

Enchiladas

2 lbs. boneless/skinless chicken breast
10 oz. enchilada sauces
16 oz. refried beans
3/4 lb. graded A cheddar cheese
1/2 lb. monarade jack cheese
1 c. chopped olives
1 c. green pepper
1 dz. tortillas

Cut chicken in small chunks, place bones & chicken in tortilla, roll the tortilla, place in a 9x13 pan, baking dish. Pour enchilada sauce over tortillas. Layer cheese on top of enchilada sauce. Bake at 350 degrees for 20 mm. Add olives & green peppers. Bake for

Fish Soup

6-8 c. 1" oubod fish (King or Chum)
1/2 head of cabbage, chopped
2 or 3 carrots, sliced
1 chopped potato
2 tblsp. Lea & Perrins Worchestershire Sauce
2 tblsp. salt
1 can Cream of Chicken Soup, Cambells or Creamy Chicken Mushroom Soup

11/4 c. uncooked rice
1 c. incooked macaroni

In a 6 qt. pot, fill about 1/2 or 3/4 full of water, add rice, salt, water, carrots, potatoes, cabbage, Lea & Perrins & heat to boiling. After it boils, cook for 10 mm. then add macaroni, fish, & Cream of Chicken Soup & cook 10 more mm. or until macaroni is done. A can of tomatoes can be added with the fish.

Dried Black Fish

Choke the fish until dead

get two branches from a tree 1 long end out pointing in the opposite direction, poke them through the mouth & tie the ends together, hang outside to dry.

Baked Eels

Clean, take out guts, remove the tail

fill the pan until well fitted & put into oven uncovered. Keep draining until no more oil. Bake at 350 degrees.

Salted Goose

Soak in salt, keep soaking.

Change water until no more salt, then cook & enjoy!

Baking Powder Bread

5 c. flour
1/2 c. sugar
1 tsp. salt
1 c. dried milk
5 tsp. baking powder

Mix together & add water, when its thick, oil it & put oil on the bottom of pan & put it in at 350 degrees & bake til done.

Tundra Tea (Iyuuk)

Put a handful of tundra tea to a pot

Two tea bags

Add boiling water & serve

Stocks

Pick before they stretch too much

If desired, add with fish or plain boiled

Cook as frozen vegetables-boil for 15 to 20 min on med-hi

Rhubarb Leaves

1 pkg. dried apples
3 handfuls of rhubarb leaves
Dash of cinamon
Add sugar, taste it if you think there's enough

Boil for 20 mm. on med-hi

Dried Moose Meat

Slice the meat

Hang out to dry

When dried, eat w/salt or seal oil

Gravy

Boil some water in a pot.
add one cup of flour and a 1/2 cup of milk
let heat and add 1 tsp. of salt, 3/4 cups of shredded onoins
1 cup of saucy mix and cook for about 15 minutes

Moose Ribs

Use about 5 cutted moose ribs
put some oil into a pan and set the oven until they are done.
add some spices if desired

Pot Roast Beaver

Cut a small beaver's hindquarters into pieces
dip into some flour
brown in Dutch oven
Add two small onions
2 bay leaves
add salt and pepper for taste
cover and let cook until fork tender

Fried Eels

cut the head off of the eels
put the eels in the oven
bake at 350 degrees farenheit
cook the eels until they are brown and oily
take out of the oven and let cool for a while
eat with vegetables, mashed potatoes and whatever you desire

Kippered Fish

1 fish
cut the fish and hang it for 5 days
Boil in water and until cooked and then eat

Alaskan Blueberry Pie

3 cups blueberries
3 tbsp. flour
1 1/2 cups sugar
mix all ingredients together. Then place into a double layered pie
crust. Use only metal pans. Take out the pie and enjoy with the family!!!

Cake Doughnuts

3 1/2 cups flour
1 cup of sugar
3 tbsp. baking powder
1/2 tbsp. salt
1/2 tbsp. cinamon
1/2 tbsp. nutmeg
2 tbsp. shortening
2 eggs
3/4 cups of eggs without shell
mix all of the ingredients and cook in oil until golden brown.
This would make a great treat for you and your family!!

Strips

Fill a bucket with water half way. Add Rock Salt and soak fish in the water for about 15-20 minutes. Take the strips out and hang them with the dried fish. Takes a little bit shorter time to dry than the dried fish.

French Toast

Take a loaf of homemade bread and cut into regular slices. Use about 5 eggs to mix with 3 teaspoons of Darigold milk. Add 1 tbsp. of cinamon to the mixture. Use a sauce pan and add some crisco or wesson oil to the pan. Dip the bread in the battered egg mix on both sides. Cook the toast until golden brown. You may use Salmon berry Syrup from page 3. Sit down to an early Sunday morning and enjoy with your whole family!!

Black fish

any much black fish you want
put the fish in a pot
cook the fish until the skin cracks
serve when cool
you may eat hot, but watch your tongue!!!

Sourdough Pancakes

3 cups flour
2 cups warm water
1 tbsp. yeast
3 tbsp. sugar

Mix the ingredients together. Put them in a pot. Leave for about 4 or 5 days in the pot. On the fifth day, put 2 cups of water and 1 tbsp. of sugar. cook like regular pancakes.

Qumlanaq

any fish you want
freeze the fish until all frozen
take out of freezer and cut into small pieces
eat and enjoy with some seal oil

Blueberry Juice

5 cups blueberries
4 tbsp. sugar

drain the blueberries and take the juice out. Add the sugar and put in refrigerator. Enjoy the juice while you can. Take the time to taste the nature!!!!

Russian Salmon Pie

2-layer pie crust
3 cups cooked rice
1/2 diced onion
2 tbsp. parsley flakes
3 lbs. cooked salmon

Combine the cooked salmon with the other ingredients except for the pie crust. After done mixing, place into the pie-crust and cook in the oven.

Dried Fish

any fish you desire
cut off the head and clean out the guts
start from the top of the body and start cutting from the head down to
the tail. leave the tail on.

do the same on both sides on the inside of the fish cut some lines from the front to the back no to hard. Be careful not to cut the fish. The lines can be thick and they can be thin. Make sure they are parallel. Hang in smokehouse for 2 weeks or until done. use driftwood or birch to smoke the fish. Soak in salt water or add salt rock when done.

Aqutaq

1 large whitefish-boiled for 20-25 minutes
clean the fish, leaving only the meat
squeeze the meat until dry
2 1/2 cups crisco shortening
1/4 cups wesson oil
1 1/4 cups sugar
mix the crisco, wesson and the sugar in a large bowl. Make sure it is
mixed well
5 cups blueberries and blackberries mixed
2 cups raisins
add the fish, berries and the raisins to the mixed ingredients
freeze for 2 hours ad eat when frozen

Stink Fish

get any fish you want
let the fish stay in a warm place without cover
take it out and eat it with some seal oil

Popcorn Balls

Pop two gallons of popcorn
melt together;
1/2 cups sugar
1/2 cups corn syrup
1/4 cups butter/margarine

Heat until hot or boiling. Decrease the flame to medium and after that, put to high boil for 45 minutes. While the mixture is in liquid, pour over the popcorn

Salmon berry Syrup

1/2 gallon salmon berry syrup
2 cups sugar
4 tbsp. cornstarch
Boil the ingredients together and cool.
Add to pancakes or waffles (whatever desired)

Fruit Salad

6 1/2 Bananas
4 Oranges
4 Red Apples
1/2 cup shredded coconut
2 cans fruit cocktail
1 Cool Whip (large one)

Dice the fresh fruits into bite-sized pieces and add to the ingredients cool for 2 hours in refrigerator or eat after done mixing

Fried Bread

2 cups flour
1 tsp. salt
2 tsp. baking powder
1 egg
3/4 cup water
1/4 cup oil

Add the ingredients together in the order they are in. Cook in oil. Wait until golden brown on each side and then take out to cool and eat.

Potato Salad

1 dozen eggs
6 potatoes
1 cup diced celery
1 cup Mayonaise (Best Foods)
1 tbsp. Parsley Flakes

After you boil the eggs and potatoes, add them to the other ingredients
Mix until done.
Freeze or eat when you want. (Freezing the aqutaq may be better)

Chiplets

2 lbs. moose meat
3 cups water
1/2 cup flour
4 cups minute rice
1/2 cup diced onions
1 tsp. Salt
1/2 tsp. Pepper

Chiplets

1 lb. moose meat
1/3 cups Lea & Perrins
1/2 tsp. Mrs. Dash Regular Seasoning

in a pan, add these things and cook until the meat is done
Add some salt if desired
eat individually or if desired with some cooked rice

Macaroni Salad

4 cups Macaroni cooked and cooled
1 dozen eggs boiled and diced
1 cup Mayonaise
1 can of Spam
1 tbsp. Parsley

Add the ingredients together and have fun eating!!

Blueberry Jam

4 cups blueberries
2 cups sugar
4 tbsp. cornstarch

Boil the ingredients in a pan and cook until thick
When cool, put in jars
Store in cool place
Add to any bread you like

Nacho Supreme

1 bag of Doritos Tortilla Chips
Any cheese you desire
1 green pepper
1 red pepper
1 tomato

Place the nachos in a cake pan or cookie sheet in one layer. Dice the green pepper, red pepper and the tomato into small bite-sized pieces. Cut the cheese into small 1x2 inch pieces. (Make smaller if necessary.) Piece the cheese on the nachos and spread the tomato end the peppers over the cheese and the nachos. Warm oven for 450 degrees and place the nachos in the oven. Cook for 5-7 minutes.

Moose Soup

2 lbs. moose meat diced
11 cups water
1 tsp. salt

Place all of the above in a cooking pot over a medium flame. Wait until the meat is almost cooked.
3/4 cup of macaroni
3/4 cup of rice

Add the rice and macaroni into the soup.
dice 2 potatoes and add to the soup.
If desired, add some Lea & Perrins sauce for flavor.

Aqutaq

1 pike/whitefish (Whatever you want) boiled about 25 minutes
take fish out
cool the fish for a while
clean the fish
take out the bones and leave only the fish meat.
squeeze the fish and make fluffy.
use a very large bowl
3 cups of crisco
1 1/2 cups sugar
1/2 cup Wesson oil
6-8 cups of any berries (salmonberries, blueberries, redberries etc.)
in the large bowl, mix the criso, sugar, wesson oil
When mixed, add the fish little by little
Add desired berries
